Peppered tofu, cauliflower, guacamole wrap!

So I was feeling like committing a little carbicide the other night but I wanted to stay healthy…. especially after all my tequila drinking the whole week before in Mehico…and taco eating and margarita drinking… oh the margaritas.. Anywho, I found a very similar wrap recipe to this one on Pinterest but modified it with a few of my fave ingredients! I snack A LOT as I cook, I really need to work on that to get accurate serving sizes but this makes about 4 wraps.

Y’all need

  • Whole grain wraps

Peppered Tofu 

  • About 300g firm tofu 
  • 1/2 tbs ground pepper
  • 1tbs olive oil (or whatev oil you normally cook in)
  • 1 tbs soy sauce

Carrot slaw

  • 2 large carrots 
  • 1 tbs fresh lemon juice 
  • 1 tbs olive oil 
  • Salt and pepper

Roasted cauliflower 

  • 1 headcauliflower 
  • 1 tbs olive oil
  • Salt and pepper 


  • 3 ripe avocados 
  • Scant 1/4 cup red onion
  • Scant 1/4 cup cucumber 
  • Scant 1/4 cup cherry tomatoes 
  • Juice of 1 lime
  • Salt and pepper
  • 1 tbs veganaise (optional)
  1. Preheat the oven to 400, chop your cauliflower into smallish florets, toss lightly in olive oil, s&p and put on parchment lined tray and into the oven. Bake for about 12 minutes or until golden on the outsides.
  2. Cut your tofu into smallish cubes and fry in oil for a few minutes..
  3. Meanwhile peel and spiralize your carrots (or cut thinly into noodley slices)
  4. Add lemon juice, olive oil and salt and pepper, set aside.
  5. Back to tofu – Add your pepper 
  6. After coated in pepper, add your soy sauce and cook until crispy, set aside
  7. Make your guac- add all finely chopped ingredients, avocados, lime juice and vegenaise to a bowl and mash
  8. When building my wraps I started with guacamole then carrots, and then I added the tofu and cauliflower last before I rolled! 
  9. Voila!

*A few good add ons include hummus, hot sauce and cilantro! Yum!
