Vegan sweet potato, quinoa burgers!

Super simple veggie burgers that, when made correctly, hold very well between bread, in a bun or wrapped in lettuce! I make these weekly.. topped with avocado, cucumber, pickles and spicy (vegan) mayo. They are a great, healthy, hearty meal! Nom nom nom!


  • 2 cups cooked quinoa 
  • 2 cups of diced sweet potato (about 2 med-large potatos
  • Small handful parsley, basil or thyme (I tend to use whichever is in the fridge, all options are good)
  • 2 minced garlic gloves 
  • 1 small onion (red or yellow)
  • 2 tbs olive oil for cooking

  1. Start by cooking your quinoa according to packaging.
  2. Preheat your oven to 400 
  3. Cube the sweet potatoes and drizzle with a tiny bit of olive oil on a tray and place in the oven. 
  4. Chop your onion and fry it at a low/medium until fragrant and translucent, add your garlic, after a few minutes add you basil, parsley or thyme.
  5. After your sweet potato is cooked and easy to put a fork through, transfer to a bowl and mash thoroughly.
  6. Add your quinoa, onion, garlic and chosen herb, add salt and pepper and mix well until all ingredients are combined.
  7. ***I found mixing the ingredients while still hot helped the patties stay together.
  8. Form the mixture into your preferred burger size and fry at a medium heat in 2 tbs oil.
